Tarator Soup on Ice . A Dish with a Twist

tarator soup Tarator soup sometimes referred to as cold cucumber soup is the liquid version of the snow white salad, it has similar ingredients but can be served differently. It generally includes ground walnuts, garlic, and yogurt and often herbs, and vinegar or lemon juice are added. Tarator soup served in a glass of ice helps to clean the palette ready for your main dish. Many variations are localised and the cucumbers can even be replaced by lettuce or carrots. If you are travelling to Bulgaria during the summer months when the temperatures are over 30 degrees Celsius, and you are in need something to cool you down the last thing you will think of is soup. Now you can give it a try at home and impress your friends with this lovely Balkan starter.

Tarator Soup Ingredients

1 Large Cucumber 1 garlic clove to taste 500 ml plain yogurt 1 cup cold water Small bunch fresh dill 4 Tablespoons crushed walnuts 30 ml of olive oil Dash of salt to taste and Ice cubes

Method:

Chop or grate as finely as you desire the cucumber and dill. Press or finely chop the garlic. Add everything to a jug or bowl add salt to taste Add yogurt and most of the crushed walnuts and mix well. Add the cold water until a texture you like is formed, not too thick, just runny enough to drink from a glass Place in fridge until cold and ready to serve. Just before serving place 1 or 2 ice cubes in a glass, pour in your liquid and sprinkle a few crushed walnuts over the top. Or place in a soup bowl and sprinkle walnuts over the top and serve cold. This recipe should make enough for 4 persons. and take only 20 minutes plus enough time for your Tarator to become cold enough in the fridge.
